A Certificate of Analysis (COA) is the document that turns a verbal quality promise into a measurable one. For dehydrated vegetables it should accompany every shipment, and a buyer who knows how to read it can catch problems before goods leave the port.
Here is what each major section tells you.
Moisture
Moisture is the defining spec of a dehydrated product. Too high and you invite microbial growth, caking and a shorter shelf life; it also means you are paying for water. Confirm the result sits within the contracted range and that it was measured by a stated method.
Mesh / particle size
Whether you ordered kibbled, minced, granules or powder, the mesh line confirms the cut. Mismatched particle size is one of the most common reasons a lot performs differently on a production line even when everything else is in spec. Check it against your purchase specification, not just the general grade name.
Microbiology
Total plate count, yeast and mould, and the pathogen lines (Salmonella, E. coli, coliforms) tell you the hygienic status of the lot. Look for absence statements on pathogens and counts within your agreed limits. If your market requires a specific reduction treatment, confirm it is referenced.
Pesticide residues and contaminants
For destinations with strict MRLs (maximum residue limits), a pesticide residue report or a compliance statement against the relevant regulation matters as much as the microbiology. Heavy metals and extraneous matter may also appear here depending on the product and market.
Traceability details
A complete COA ties back to a lot or batch number, a production date and the product specification. That linkage is what lets you trace a shipment if a question ever arises. A COA without a lot reference is of limited value.
Before you approve shipment
Cross-check every line against your contracted specification, confirm the lot number matches the goods, and keep the COA on file with your other shipping documents. If a result sits at the edge of a range, ask for the method and, where warranted, a pre-shipment sample.
