Buyers new to dehydrated ingredients often compare the price of dehydrated onion against fresh onion on a straight per-kilogram basis. That comparison is misleading. One kilogram of dehydrated onion is the concentrated equivalent of roughly 8-10 kilograms of fresh onion, before you account for the peeling, trimming and spoilage losses that never leave the fresh supply chain.
For a food manufacturer, the number that matters is landed cost per kilogram of usable onion solids in the finished product — not the headline price of either raw material.
Yield is the first correction
Fresh onion arrives with skin, roots and moisture you pay to ship and then throw away. Typical usable yield after peeling and trimming sits well below the gross weight, and every kilogram of water is freighted at the same rate as the solids you actually want.
Dehydrated onion inverts this. Moisture is removed at origin, so you ship concentrated solids. The rehydration ratio means a comparatively small dehydrated volume replaces a large fresh volume in a recipe.
Freight and storage compound the difference
Because dehydrated onion is a fraction of the weight and volume of its fresh equivalent, ocean freight per unit of onion solids drops sharply. It is also ambient-stable: no reefer containers, no cold chain, and a shelf life measured in months rather than weeks.
For importers far from growing regions, this is frequently the single largest line item in the total-cost comparison — and the one most often left out of a naive price check.
Consistency has a cost value too
Fresh onion pungency and size vary by season and lot. Dehydrated grades are specified and screened, so a granule or powder delivered against a fixed specification behaves the same way batch to batch. For a plant running standardized recipes, that predictability reduces rework and off-spec production.
The takeaway
Before deciding dehydrated looks expensive, build the comparison on usable solids: rehydrated yield, freight per unit of solids, storage and waste. On that basis dehydrated onion is usually competitive, and often cheaper, for manufacturers who are not next door to a growing region.
